Caramelised Onion and Gruyère Fougasse

OUR FOUGASSE IS BACK! But this time, imagine eating French onion soup, but in bread form.

We slowly caramelise the onions in Mt Zero olive oil until they are sweet, sticky and dark, and mix them in to our dough. We then fold in fresh spring onion and chunks of top quality Gruyère. Halfway through baking, we grate some more Gruyère on top, because you can never have enough cheese, And bam! You’ve got yourself a foog.

As always, treat a fougasse like you would a focaccia - enjoy it as a side with some wintry soup, have it as a pull-a-part for lunch, add it to an antipasti platter, take it out to meet your grandma… the world is your oyster (or your fougasse, more appropriately).
